Asansol to Armenia: Chef Saby revives forgotten flavours

It was only few days ago, when my decision-making skills were put to a major test, the occasion being my parent’s anniversary dinner. The experimental in me wanted to try out something that we have never tried before, while my realistic twin kept reminding me of the clichéd options around. How often have we wanted to make our taste buds experience something completely out of the ordinary and yet have been compelled to stick to the same old tiring cuisines? I have always believed that eating out should be a magically unique experience and not simply a generic exercise. I am glad that a lot of people share a similar line of thinking, resulting in a lot of new chefs innovating and experimenting with different untrodden cuisines.

Sharing similar philosophy, Lavaash by Saby is one such restaurants born out of a Bengali boy’s love for experimental food and a quest to leave behind a legacy. Chef Sabyasachi Gorai, fondly known as Saby, has been the youngest executive chef at an age of 26 and has received many accolades including the title as the “Best Chef of India”. His journey from Hotel Management to finding joy and magic in the confines of the Kitchen has been quite interesting. For him, culinary expression was a form of art, playing with textures and colors. After years of working as a Chef across the globe and cooking for some of the biggest names around, Saby decided to take the plunge into entrepreneurship. He launched Lavaash by Saby at Mehrauli which traces the influence of early Armenian settlers in Asansol, his hometown, and the rest they say is history. Getting to the journey and research of traditional Armenian cuisines is another interesting story altogether.

Chef Saby would be present at The Market Place to be held at Vedic Village on 10th and 11th December and no points for guessing how excited I am to meet him.
